Guacamole

Patricia, Fabricio, Andre and Fernanda, I miss you guys! That's why I've decided to post the recepies from our last dinner at my house.
Here we go:
Preparation time: 30 minutes
Total cooking time; Nil
Serves 6 as a side dish


3 avocados (actually, in Brazil, only 1 should do the trick since they are huge!)
1 small tomato
1 - 2 red chillies, finely chopped
1 small red onion, finelly chopped
fresh coriander.
1 tablespoon sour cream (or just yogurt)
1 - 2 drops habanero or Tabasco sauce


1. Cut the avocados in half, discarding the skin and stone. Roughly chop, then mash lightly with a fork.
2. Cut the tomato in half horizontally. Using a teaspoon, scoop out the seeds and discard. Finely dice the fleshn and add to the avocado.
3. Stir in the chilli, onion, coriander, lime juice, sour cream and habanero or tabasco sauce. Season with cracked black pepper.
4. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours, removing 30 minutes before serving to allow the guacamole to reach room temperature.


Serve with nachos with melted cheese on top (we used Tacos) or as sandwich fillings.
